Swiss bread cake
Ticino bread cake is a great classic on our tables. Just like cheese that was created to preserve milk, bread cake is a way to preserve bread in times past.
The bread that was bought in the 19th century was often day-old and was made once every 10 to 15 days. In addition to the ingredients to make the bread it was necessary to secure wood for the furnace where to bake it. Unfortunately, bread after a few days becomes hard and impossible to eat. The only way was to make it in smaller pieces and then soften it in the broth or in milk. Lemon zest, raisins, grated chocolate, walnuts, hazelnuts, almonds, candied fruit, and local grappa (schnapps) are added.
Of course, each family has its own recipe that it jealously guards with small variations. Today, bread cake can be bought at the best bakeries, markets or village festivals.
Definitely worth trying to understand our culinary traditions and history.
